Brian Cannon

General Manager

Growing up in the South, General Manager Brian Cannon learned to live by the saying, ‘there are no strangers, just friends we haven’t met yet’.  For him, hospitality is more than a career, it’s a way a life.  Recognizing early on that sitting behind a desk didn’t suit him, he has passionately pursued a profession where his love for an electric, ever-changing atmosphere and exceeding guest expectations can shine in a very hands-on way.

Brian brings over a decade of experience working in both the heart and front of the house to The Glass Knife.

He worked as a training general manager for a Minneapolis-based casual dining franchise for 5 years before transitioning to the role of general manager for several Central Florida restaurants, including Logan’s Roadhouse. Brian was most recently assistant general manager of Cask and Larder at Orlando International Airport.  In this pivotal, opening team role for the airport’s first upscale dining location, he was responsible for hiring and front-of-house training as well as development and implementation of new scheduling and inventory management systems.

“What excites me most about The Glass Knife is the commitment to offering amazing cakes and desserts, an enjoyable savory menu and the attention to detail in design and operation,” said Cannon. “With all the tasks of running a successful business, our primary purpose is to provide a unique and approachable experience.”

Cannon holds a Bachelor’s degree in business management from the University of Texas, Austin and is a certified instructor and proctor in food safety and responsible beverage service.
